Manufacturing Process of Roasted Almonds

1. Raw Material Selection

  • Sourcing: High-quality almonds are sourced from certified farms, primarily from California, Australia, or Indian regions like Kashmir and Himachal.

  • Inspection: Almonds are visually and mechanically sorted to remove damaged, discolored, or foreign materials.

2. Cleaning & Grading

  • Cleaning: Almonds are washed to remove dust, shells, and any pesticide residue.

  • Grading: Nuts are graded based on size, color, and quality (Whole, Split, Broken).

3. Drying

  • Surface moisture is removed using hot air dryers or by air-drying to ensure optimal roasting.

4. Roasting

  • Dry Roasting (without oil): Almonds are roasted using hot air or in rotary roasters at 130–160°C for 10–20 minutes.

  • Oil Roasting (optional): Almonds are deep-fried in healthy oils like sunflower or groundnut oil at controlled temperatures.

  • Continuous or batch roasting systems are used depending on capacity.

5. Flavor Coating

  • Roasted almonds are tumbled in flavor mixing drums where dry seasonings or wet coatings are applied.

  • For sweet coatings (like honey or caramel), almonds are glazed while still warm.

  • Flavor adhesion agents like gum arabic, maltodextrin, or starch are sometimes used.

6. Cooling

  • Almonds are cooled rapidly to retain crispness and avoid condensation.

7. Packaging

  • Packed in nitrogen-flushed, moisture-barrier pouches or jars to extend shelf life.

  • Often vacuum-sealed or in resealable zip-locks for consumer convenience.
