Manufacturing Process of Makhana
1. Harvesting and Collection

Makhana seeds are harvested from the Euryale Fox plant, commonly grown in wetlands and ponds.

The seeds are collected manually or semi-mechanically from water bodies in states like Bihar, Assam, and parts of Eastern India.
2. Sun Drying

Collected seeds (black in color) are sun-dried for several hours to reduce moisture.
3. Roasting
-
Dried seeds are roasted in cast-iron pans at high temperatures (250–300°C).

This step hardens the outer shell and makes the seed pop.
4. Cracking/Popping

After roasting, the seeds are manually cracked to separate the white edible core (makhana).

The edible popped seeds are then sieved and sorted by size and quality.
5. Flavoring

Popped makhana is lightly roasted again with ghee or edible oil, and seasonings are added.

Flavoring is done in tumbler mixers or seasoning drums to ensure even coating.
6. Packaging

Once flavored and cooled, makhana is nitrogen-packed to retain freshness and extend shelf life.
