Brownie Brittle: Manufacturing Process
1. Mixing the Batter
-
A batter is prepared similar to traditional brownie mix, but with less moisture to allow for a thinner, crispier texture.
-
Ingredients like cocoa powder, flour, sugar, butter or oil, eggs (or egg replacers), and leavening agents are mixed until smooth.
2. Flavor Additions
-
Chocolate chips, nuts, or flavor infusions (like caramel or espresso) are added to the batter depending on the variant.
3. Spreading & Shaping
-
The batter is spread thinly and evenly onto a flat baking tray or conveyor belt lined with parchment or silicone sheets.
-
Consistent thickness (around 3–5mm) ensures even crispiness.
4. Baking
-
The batter is baked at a moderate temperature (typically 160–180°C) until it becomes firm and crispy, but not burnt.
-
In some processes, a dual-stage baking method is used — initial baking followed by low-temp drying for extra crunch.
5. Cooling & Breaking
-
The brittle sheet is cooled completely to harden.
-
Once set, it is broken or cut into bite-sized irregular or uniform pieces.
6. Coating or Drizzling (Optional)
-
Some variants are coated or drizzled with chocolate, caramel, or flavored icing for extra taste and visual appeal.
7. Packaging
-
Pieces are packed in moisture-resistant, resealable pouches or boxes to maintain crunch and freshness.
