Manufacturing Process of Lavash

1. Ingredient Mixing

  • Combine flour, water, and salt. Yeast or sourdough starter is optional depending on the desired texture and regional variation.

  • Mix the dough thoroughly until it's smooth and elastic.

2. Fermentation (Optional)

  • Let the dough rest for 30 minutes to several hours to allow gluten development and mild fermentation (especially if using yeast).

3. Portioning and Shaping

  • Divide the dough into small balls (about 100–150g each).

  • Roll or stretch the balls into large, very thin ovals or rectangles.

4. Baking

  • Traditionally, lavash is slapped against the hot inner walls of a tonir and baked quickly (in about 30–60 seconds).

  • Industrial methods use conveyor ovens at high heat (400–500°F / 200–260°C).

5. Cooling and Packaging

  • After baking, lavash is cooled to room temperature.

  • If packaged immediately, it remains soft. If dried, it becomes crisp and can be stored longer.
