Manufacturing Process of Enrobed Cookies

  1. Dough Preparation

    • Ingredients like flour, sugar, fat (butter/oil), eggs (optional), and leavening agents are mixed into a cookie dough.

    • Flavorings (vanilla, cocoa, spices, etc.) may be added at this stage.

  2. Shaping & Moulding

    • Dough is sheeted and cut into shapes, or wire-cut/extruded for round cookies.

    • Consistency is important so all cookies enrobe evenly later.

  3. Baking

    • Cookies are baked in a tunnel oven at controlled temperature (160–220°C depending on recipe).

    • After baking, they are cooled to room temperature to prevent cracks or moisture condensation.

  4. Enrobing

    • Cookies are passed through an enrobing machine, where a curtain of melted chocolate (real chocolate or compound) coats the top and sides.

    • The bottom may also be coated by running the cookies over a chocolate bath or using a bottoming device.

  5. Decorating (Optional)

    • Enrobed cookies are passed through a cooling tunnel (10–15°C) so the coating solidifies with a glossy finish.

  7. Packaging

    • Packed in flow wraps, trays, or cartons with moisture barriers to retain freshness.

For Enrobing:

  • Real chocolate (dark, milk, or white chocolate) or

  • Compound coating (made of cocoa powder + sugar + vegetable fats + emulsifiers like lecithin)
