Manufacturing Process of Makhana

  1. Harvesting:

    • Seeds are collected from lotus plants growing in ponds and wetlands.

  2. Cleaning & Grading:

    • Seeds are cleaned to remove mud, dirt, and impurities.

    • Graded by size for uniform roasting.

  3. Pre-heating (Drying):

    • Seeds are sun-dried or roasted in hot sand to reduce moisture.

  4. Roasting / Popping:

    • Seeds are roasted at high temperature (around 250–300°C) in iron pans.

    • They expand and pop when struck with a wooden hammer.

  5. Polishing:

    • The outer shell is removed, and the popped makhana is polished to improve whiteness and appearance.

  6. Flavoring (Value Addition):

    • Roasted makhana is coated with seasonings, spices, or sweet flavors.

    • Oil-free or lightly oil-roasted options available.

  7. Cooling & Packaging:

    • Flavored makhana is cooled to avoid moisture retention.

    • Packed in airtight pouches, tins, or jars to maintain crispiness.
